Join us at Trump Winery for a tasting of experiments focused on how to deal with underripe fruit and dilute juice.
Experiments will include use of pre-fermentary thermovinification, chaptalization, and reverse osmosis to concentrate flavors and color. Two vineyard interventions for concentration will also be presented.
